What I do know is that I don't have to be helpless, I can do my part nutritionally to make sure that his body is functioning optimally. I can balance his blood sugar, I can feed him nutrient dense, wholesome foods.
The heart to heart with my husband was about being partners in caring for our children...He agreed and I made a deal with him to replace his unhealthy sweets (my hubs has the worst sweet tooth) with healthy alternatives. So here it is the creation that came out of wanting to replace the unhealthy sweets with tasty and healthy ones.
Being healthy is not about deprivation, it truly is about crowding out the bad stuff with the So Much Better!
Orange Blossom Dark Chocolate
Covered Coconut Bites
- 1 - 7 ounce bag of organic unsweetened coconut flakes
- 4 tablespoons honey
- 4 tablespoons coconut oil
- 1 teaspoon organic vanilla extract
- 5 ounces Dark Chocolate melts
- 3 drops of wild orange essential oil (only brand safe to ingest is doTERRA, as me about it for more info)
In a high powered blender or food processor blend the coconut flakes until they become like a soft powder. You can also purchase dessicated coconut (all it is is finely shredded coconut). In a bowl mix in the coconut, honey, coconut oil (do not use any other oil, only coconut), vanilla and wild orange. We used a wooden spatula to mix ingredients and then used our hands to better mix.
Once you have the mixture, you will use your hands to squeeze into little bite size balls. My kids helped for a little bit, that lasted all of 2 minutes. Once you have all the mixture made into balls, put them in the fridge for 10 minutes.
When you get the coconut balls out of the fridge they should be firm, no give. Then you will melt the chocolates, not hot just warm. Put in a bowl, use two forks to put a single coconut ball into the chocolate, roll it around until covered and put on wax paper to dry. Do this until all the coconut bites are covered in chocolate. Put back in fridge for 5 minutes and they are ready!!
You can add coconut flakes to the chocolate, or pecans, even dust them with cacao. Either way they are so good!!
